Moody Tongue was founded in Chicago's Pilsen neighborhood in 2014 by cousins Jared Rouben, President and Brewmaster, and Jeremy Cohn, CEO. Rouben trained at the Culinary Institute of America and cooked in Michelin-starred kitchens — Martini House in Napa Valley and Thomas Keller's three-Michelin-star Per Se in New York — before completing the Siebel Institute's brewing diploma and serving as Brewmaster at Goose Island's brewpubs, where he built collaboration series with chefs Rick Bayless, Stephanie Izard, and Paul Kahan.
That culinary background became Moody Tongue's founding idea: “culinary brewing” — sourcing the highest quality ingredients, understanding how to handle them to showcase flavor and aromatics, and knowing exactly when in the brewing process to bring them in. Rouben builds every recipe the way a chef builds a dish, prioritizing balance over complexity.
In 2021, Moody Tongue's tasting menu earned a Michelin star — making it the world's only Michelin-starred brewery, a distinction it has held every year since. The brewery now operates dining concepts in Chicago, New York, and West Palm Beach alongside its year-round and limited-release beers.
